Last Night's Dinner- Kickin' Chicken Pot Pie

Lately, I've been seeing a lot of my Facebook friends making chicken pot pies (with varying degrees of healthiness), and they all look so darn good, so.... last night I made Hungry Girl's Kickin' Chicken Pot Pie. Did you know that a regular Chicken Pot Pie can have 850 calories and 50 plus grams of fat? HG's only has 235 calories, 6g fat, and 723mg sodium...that is if you can stop at 1 serving...which we could not.

I don't think there's anything proprietary about the ingredients, so I'll share them: frozen mixed veggies (heated according to package instructions), can of 98% fat free cream of mushroom soup, diced cooked chicken, and reduced fat crescent rolls. I mixed the first three ingredients together, dumped in a Pam-sprayed, 9" baking dish, cooked for 15 at 350, stirred, cooked another 10, placed rolled out dough (just three crescents) on top, baked another 15 till brown. Simple, easy, and....meh. I could eat nothing but Mexican and Indian food for the rest of my life, though, so perhaps my spicy pallet should not be the standard. Try it yourself and let me know!

Dahubby says, "It's delicious. 'Course, I was starving and after two helpings, I'm still hungry. Might have to try again to know if this is a keeper."
