Last Night's Dinner- Super Duper Spaghetti Pie

Have you ever used Tofu Shirataki Noodles? If you read my last post detailing my trip to Albertsons, you might have been wondering what in the world I was going to use those for. Enter Hungry Girl's Super Duper Spaghetti Pie. Ok, the bottom is the Tofu Noodles mixed with tomato sauce, veggies, and Egg Beaters. Then, it's topped with more tomato sauce, turkey pepperoni, and lots of ooey-gooey mozzarella cheese. It's some kind of delicious hybrid between spaghetti and pizza and it rocked! You get to eat a 1/4 of this pie for one serving, which is not going to bust your gut since this is not real pasta, but it's enough to satisfy. And the best part is....it's only 83 calories and 1.5 grams of fat per serving!!!! Seriously, you could sit down and consume the whole thing for only 332 calories. Now that's what I call smart food. I only wish that Dahubby had not been in the kitchen while I was making it. The noodles have a tofu odor before you rinse and dry them that isn't so appealing. If, however, he had not seen/smelled that step, he admitted that he would not have known they were not super-carb-heavy pasta noodles.

Dahubby says, "Really good. Let's have that one again."
